triple lemon muffins






chad's parents have great fruit trees bursting with lemons. we took a bag full and came up with these yummy lemon muffins.



we had about 12 small to medium lemons.

batter:
3 1/2 c flour (we used whole wheat)
1 tablespoon baking powder (look for aluminum free)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 c sugar
grated rind (just the yellow part) of 2 lemons
1 c milk
1/4 c lemon juice
2 eggs
1 c melted butter (2 sticks)

in one bowl combine the wet stuff , leave the butter separate
in a big bowl combine the dry stuff

add the wet to the dry stir a little, then add the melted butter and stir just to combine
overstirring makes more dense muffins

grease muffin tins, filling almost to the top

bake at 350 for 15-20 min until golden


meanwhile.............   make syrup.

1/2c sugar
1/4 c lemon juice

bring to boil and simmer till sugar dissolves.



while the muffins are warm poke lots of hole with a kebab skewer. spoon syrup over the top
(i should of photographed this, but thing were hectic in the kitchen and i forgot.)
let cool

meanwhile........since everything is better with frosting.

mix 1c powdered sugar with enough lemon juice to form a drizzle consistency frosting.
drizzle away and eat. we ate so many no one ate dinner.
